In my opinion, Goku was better off marrying Bulma, since (like you said) Goku and Bulma had more history than any other character in the Dragon Ball universe. The introduction of Chi Chi (to me) feels very much shoehorned, despite the fact that it was plot-related (involving the Bansho fan and Muten Roshi demonstrating the Kamehameha wave for the first time). I do agree that the universe would have unraveled very, VERY differently if Goku married Bulma, but I feel that a deeper history between two characters should have accounted for much more than saying yes to something you didn't know what it was before you said yes to it (Goku not knowing what marriage was, and said yes to it...thinking it was food, which I feel was straight-up shoehorning sabotage).
